Ingredients
For the Dough (makes 2 layers)

250 g (2 cups) all-purpose flour

200 g (1 cup) unsalted butter, cold, cubed

1 tsp baking powder
-
50 g (¼ cup) granulated sugar

1 large egg
-
2–3 tbsp cold water
For the Walnut Filling
-
200 g (2 cups) ground walnuts
-
100 g (½ cup) sugar
-
100 ml (¼ cup) milk
-
1 tsp vanilla extract
For the Apricot Jam Layer

150 g (½ cup) apricot jam
For the Chocolate Glaze
-
100 g (3.5 oz) dark chocolate
-
2 tbsp unsalted butter
Instructions
Step 1: Prepare the Dough

In a large bowl, combine flour, sugar, and baking powder.

Cut in cold butter until the mixture resembles coarse crumbs.

Add the egg and mix until dough forms. If needed, add cold water 1 tbsp at a time to bring the dough together.

Divide dough into two equal portions, wrap in plastic, and chill for 30 minutes.
Step 2: Prepare the Walnut Filling

In a small saucepan, combine ground walnuts, sugar, and milk.

Cook over low heat, stirring constantly until thickened.

Remove from heat and stir in vanilla extract. Allow to cool slightly.
Step 3: Roll Out the Dough

Preheat oven to 180°C / 350°F.

Roll out one portion of dough to fit a 9×13-inch baking pan.

Place dough in the pan and spread an even layer of walnut filling on top.

Spread apricot jam over the walnut layer.

Roll out the second portion of dough and place it on top, sealing the edges gently.
Step 4: Bake

Bake in the preheated oven for 25–30 minutes, or until the top is golden brown.

Allow the pastry to cool completely in the pan before glazing.
Step 5: Prepare the Chocolate Glaze

Melt dark chocolate and butter together over low heat or in a double boiler until smooth.

Pour the chocolate glaze over the cooled pastry, spreading evenly with a spatula.

Allow the glaze to set at room temperature or in the fridge for about 30 minutes.
Step 6: Slice & Serve

Cut into squares or rectangles.

Serve at room temperature with tea or coffee.
