Vanilla Rice Pudding (Thermomix Recipe)

Ingredients (Serves 4–6)

180 g short-grain rice (pudding rice or Arborio)

1 L whole milk

60–80 g sugar (adjust to taste)

1 vanilla pod, split and seeds scraped

1 pinch salt

20 g butter (optional, for extra creaminess)
Method (Thermomix)
Step 1: Prepare Vanilla

Add vanilla pod and seeds (or extract) to the Thermomix bowl.
Step 2: Cook the Rice Pudding

Add rice, milk, sugar, and salt.

Insert the butterfly whisk.

Cook 35 min / 90°C / speed 1 / reverse.
Tip: Use reverse mode to prevent breaking the rice grains.
Step 3: Finish

Remove the vanilla pod.

Add butter if using.

Mix 10 sec / speed 2 / reverse.
Texture Note
The pudding will thicken further as it cools. For a looser texture, stir in a little warm milk before serving.
