Instructions
Step 1: Prepare the Filling
Heat oil in a large skillet or saucepan over medium heat. Add the beef and brown on all sides. Remove and set aside.
In the same pan, sauté onion, garlic, and carrots until softened. Sprinkle flour over the vegetables and stir for 1–2 minutes to cook the flour.
Return the beef to the pan, then gradually add beef stock while stirring. Add Worcestershire sauce and thyme, and season with salt and pepper. Bring to a simmer and cook for 45–60 minutes until the beef is tender and the sauce thickened.
Step 2: Assemble the Pie
Preheat the oven to 400°F (200°C).
Transfer the beef mixture to a pie dish. Roll out the puff pastry and cover the pie, trimming excess and pressing edges to seal. Cut small slits in the top to allow steam to escape. Brush the pastry with beaten egg.
Step 3: Bake
