French Cheese Puffs (Gougères) – Thermomix Style Recipe

150 g water

80 g butter, cut into pieces

1 tsp salt

120 g plain flour

3 large eggs (room temperature)

120 g grated cheese (Gruyère, Emmental, or Comté work best)

Pinch of black pepper or nutmeg (optional)
Preparation (Thermomix)

Preheat oven
Preheat to 200°C (fan 180°C). Line a baking tray with baking paper. -
Make the dough base
Add water, butter, and salt to the mixing bowl.
Cook 5 min / 100°C / speed 1. -
Add flour
Add flour.
Mix 20 sec / speed 4.
Remove measuring cup and let dough cool 10 minutes (important so eggs don’t scramble). -
Add eggs
Mix speed 4, add eggs one at a time through the lid, waiting a few seconds between each egg until fully combined. -
Add cheese
Add grated cheese and optional seasoning.
Mix 10 sec / speed 3. -
Shape the puffs
Transfer mixture to a piping bag or use two teaspoons to place small mounds onto the tray, spacing them apart. -
Bake
Bake for 20–25 minutes, until puffed and golden.
Do not open the oven during baking or they may collapse.
