Swiss Brioche (Zopf)

Swiss Brioche, often called Zopf, is a traditional Swiss enriched bread enjoyed especially on weekends and holidays. Unlike very sweet brioches, Swiss brioche is mildly sweet, buttery, and airy, making it perfect for both sweet and savory toppings. Ingredients (1 large loaf)

500 g (4 cups) all-purpose flour or bread flour

10 g (2 tsp) salt

60 g (¼ cup) sugar

20 g fresh yeast (or 7 g instant dry yeast)

300 ml (1¼ cups) milk, lukewarm

80 g (⅓ cup) unsalted butter, softened

Instructions
Step 1: Activate the Yeast
If using fresh yeast, dissolve it in lukewarm milk with a pinch of sugar. Let rest 5–10 minutes until slightly foamy.
(Instant yeast can be mixed directly with flour.)
Step 2: Make the Dough
In a large bowl or stand mixer, combine flour, sugar, and salt. Add egg and milk-yeast mixture.
Mix until a soft dough forms. Knead for 8–10 minutes until smooth and elastic.
Gradually add softened butter and continue kneading until fully incorporated and glossy.
Step 3: First Rise
Shape dough into a ball and place in a lightly greased bowl. Cover and let rise in a warm place for 1½–2 hours, until doubled in size.
Step 4: Shape the Braid
Punch down dough gently. Divide into 2 equal pieces and roll each into a long rope.
Place ropes side by side and braid by crossing one over the other repeatedly. Tuck ends underneath for a neat finish.
Transfer to a parchment-lined baking tray.
Step 5: Second Rise
Cover loosely and let rise for 30–45 minutes, until puffy but still holding its shape.
Step 6: Egg Wash & Bake
Preheat oven to 180°C (350°F).
Brush gently with egg wash.
Bake for 30–35 minutes, until deeply golden and hollow-sounding when tapped underneath.
Cool on a wire rack.
