Cottage Soup (Thermomix Recipe)
Rustic, nourishing, and full of vegetables
Cottage soup is a traditional, homestyle vegetable soup—simple, filling, and comforting. Made with everyday ingredients like potatoes, carrots, leeks, and herbs, this Thermomix version is easy, economical, and perfect for warming up on cooler days.
Ingredients (Serves 4–6)

1 onion, halved

2 cloves garlic

30 g butter or olive oil

3 carrots, sliced

2 leeks, sliced

2 potatoes, diced

1 parsnip or turnip, diced (optional)

1 celery stalk, sliced

1.2 L vegetable or chicken stock

1 bay leaf
-
½ tsp dried thyme
-
Salt and black pepper, to taste

Fresh parsley, chopped (to serve)
Optional additions: small pasta, lentils, or leftover cooked chicken.
Method (Thermomix)
Step 1: Chop Aromatics

Add onion and garlic to the bowl.

Chop 5 sec / speed 5.

Scrape down sides.
Step 2: Sauté

Add butter or oil.
-
Sauté 5 min / 120°C / speed 1 (MC off).
Step 3: Add Vegetables

Add carrots, leeks, potatoes, parsnip, and celery.

Mix 5 sec / speed 4.
Step 4: Simmer

Add stock, bay leaf, thyme, salt, and pepper.

Cook 25 min / 100°C / speed 1 / reverse.
Step 5: Finish

Remove bay leaf.

Taste and adjust seasoning.

Garnish with fresh parsley before serving.
For a thicker soup: mash lightly with a ladle or blend 5–10 sec / speed 4.
