Ingredients (Makes 8 rolls)
Dough

250 g milk

20 g fresh yeast (or 2 tsp dried yeast)

500 g baker’s flour

Method (Thermomix)
1. Activate the Yeast
Place milk, yeast, and sugar into the mixing bowl.
Heat 3 min / 37°C / Speed 2.
2. Make the Dough
Add butter, flour, and salt.
Knead 3 min / Dough mode.
Transfer dough to a lightly greased bowl, cover, and allow to rise for 45–60 minutes until doubled in size.
3. Shape the Rolls
Preheat oven to 220°C (200°C fan-forced).
Line a baking tray with baking paper.
Divide dough into 8 equal portions. Shape into smooth rolls and place on the tray. Cover and rest for 15 minutes.
4. Prepare the Alkaline Bath
Bring water to a gentle boil in a large saucepan.
Add bicarbonate of soda carefully (it will foam).
5. Dip the Rolls
Lower each roll into the water for 20–30 seconds, turning once.
Remove with a slotted spoon and place back on the tray.
6. Score and Salt
Use a sharp knife to slash a cross on top of each roll.
Sprinkle generously with coarse sea salt.
7. Bake
Bake for 15–18 minutes, or until deep golden brown.
Cool on a wire rack before serving.
